Cucumber Lassi

Delicious and refreshing yoghurt drink. High in protein, low in fat.

200g full fat yoghourt (4% fat - 160 kcal, 9.8 g protein)

50 - 100 ml mineral water, adjust as required

100g peeled cucumber

pinch of salt, pepper and tumeric

spring of mint

Chop the cucumber into a few smaller pieces and add it with the water to the mixer. Mix for a few seconds to mash it down before adding the remaining ingredients except the mint. Liquidise for a full minute to make a milkshake like consistence. Add salt, pepper and tumeric to taste. Pour into a tall glass and decorate with mint.

Alternatives: Add several sprigs of mint to the mixture before liquidising.
