Houmous - Chickpea and Sesame Dip

Simple yet so delicious - and very nutritious too! One of my personal favourites for over 30 years. Great in combination with soft flatbread pita, olives, feta cheese, tomatoes and more....

  • 1 small garlic clove
  • 250g cooked or canned chickpeas (drain and reserve liquid)
  • 4 tbsp olive oil
  • Juice of 1/2 small lemon, more to taste
  • 2 tbsp tahin or tahini – sesame seed paste (without added ingredients)
  • Chickpea cooking liquid
  • Slices of lemon and olives, turmeric, paprika or powdered cumin for decoration
  • 1/4 tsp each, freshly ground salt and pepper

Soft Flatbread Pita with Spelt Flour

Greek-style pita bread, made with spelt flour instead of wheat and without yeast.

Ingredients for 4 rounds.

150g wholemeal spelt flour (unsifted), keep extra flour for rolling & dusting
1/4 tsp salt
25g butter
100 ml milk
1 tbsp oil for cooking

Ginger and Lemon Grass Chicken

This Vietnamese style dish is light and low in fat, easy to make and healthy too.

500g chicken breast, finely slicked

1 stem of Lemon grass, peeled and quartered

2 slices of fresh ginger, finely sliced

1 small yellow courgette (zucchini), finely sliced

200g Mungo beans sprouts (soya bean sprouts), carefully rinsed

Cucumber Lassi

Delicious and refreshing yoghurt drink. High in protein, low in fat.

200g full fat yoghourt (4% fat - 160 kcal, 9.8 g protein)

50 - 100 ml mineral water, adjust as required

100g peeled cucumber

pinch of salt, pepper and tumeric

spring of mint
